stew, traditionally it has a lot of offal, but I've left that out in this recipe. In this recipe we use pork kasslers (smoked pork chops), however failing that you could add some plain pork meat or a bacon hock (or both).
This serves 4 small servings (it's a very heavy dish).
Ingredients:
2 sticks Celery, diced
2 Pork Kasslers
3 Bacon Rashers, chopped, rind trimmed
1 Chorizo, sliced
50 grams Beef Jerky
250 grams Brazilian Black Beans
1 Bay Leaf
1 Garlic Clove, crushed
1 Onion, chopped
Recipe Method:
Soak beans overnight in water to cover 3-4cm over top of beans. Soak jerky overnight or for 3 hours prior in just enough water to cover.
Take large pot and add beans, bay leaf, all meats and celery including water from beans and jerky, bring to boil then reduce heat and simmer covered for 2 hours.
Saute garlic and onion until onion is soft and golden and set aside. Remove about 2/3 cup beans and mash to a paste, then return to pot with cooked onion and garlic. Simmer covered for another hour, or until mixture is thick and creamy. Check after half hour, if mixture is too watery, remove lid for remaining time. Season with freshly ground black pepper and serve with boiled rice, or vegetables (steamed greens, or mashed potato).
