Quick Curried Beef Chow Mein

Description: Chow Mein is a generic chinese term meaning stir-fried noodles.  This is a quick and easy interpretation.

 

 

Ingredients:

  • Peanut oil
  • 1 large brown onion, finely sliced 
  • 1 clove garlic, crushed
  • 500g beef mince
  • 2 carrots sliced very thinly
  • 4 cups tightly packed shredded chinese (Napa or Wombok) cabbage
  • 200g rice-stick noodles
  • 2 tbsp mild curry powder
  • 1 tbsp light soy sauce
  • 1 tbsp sweet chilli sauce
  • 1 tsp brown sugar
  • 1 tsp chinese black (chinkiang) vinegar, or substitute

 

Recipe Method:

Heat oil in wok.  Cook onion and garlic until onion softens.  Add curry powder, stir until fragrant.

Add mince to wok and cook over high heat until brown and almost cooked through.

Add cabbage and carrot, cook until cabbage has wilted slightly.  Add remaining ingredients and stir-fry briefly until sauce has boiled and coated all ingredients.

Serve immediately. 

 

Notes:

We sliced the carrots very thinly using a vegetable peeler. We used a very generic mild (cheap) curry powder for this recipe. If Chinkiang vinegar is unavailable, you can substitute with a good malt vinegar.
