Description: This meatball soup uses an ultra-quick meatball method from one of Jamie Olivers TV shows. For this recipe we used some big fat Bratwurst from our local butcher.
Ingredients:
2 good quality fat sausages.
1 small leek.
1 stick celery, chopped.
1 clove garlic, crushed.
1/2 cup white wine.
1 litre salt-reduced vegetable or chicken stock.
1 cup baby button mushrooms.
1 carrot, chopped.
2 roma tomatoes, seeded and chopped.
1/4 cup basil leaves, coarsely chopped.
1/2 tsp mild paprika.
Recipe Method:
To make the meatballs, simply cut the end off a sausage and pull a small amount of meat out, then roll into a ball and set aside on an oiled or floured plate, repeat until sausage skin is empty. Discard skin.
Cook leek, celery and garlic over medium heat until just soft. Add wine and mushrooms, continue to cook over medium heat until musrooms soften. Add stock, carrot and tomato, bring to boil and simmer covered 15 minutes.
Add meatballs and paprika to soup, simmer uncoverred further 15 minutes.
Stir in basil and season to taste with salt and pepper.
