Spaghetti and Jamies Balls (quick spaghetti and meatballs)

Description: This recipe uses Jamie Olivers ultra-quick meatball recipe.  We chose to use a German Bratwurst from our local butcher.   The whole thing makes for a very quick spaghetti and meatballs.

Ingredients:

2 servings dry spaghetti.

2 good quality fat sausages.

1 medium onoin, diced.

1 clove garlic, crushed.

1 400g tin chopped tomatoes (prefererably the low-salt variety).

1 long chilli, seeded and diced (or leave the seed in for more heat).

1/4 cup finely chopped basil.

Grated fresh parmesan.

Recipe Method:

To make the meatballs, simply cut the end off a sausage and pull a small amount of meat out, then roll into a ball and set aside on an oiled or floured plate, repeat until sausage skin is empty. Discard skin.

Pre-heat tomatoes in microwave and set aside.  Cook spaghetti according to packet directions.

Fry meatballs in a little olive oil in hot pan until golden brown and almost cooked through.  Remove from pan.

Add onion and garlic, cook briefly over medium-high heat until beginning to change colour.  return meatballs and tomatoes, boil over high heat until sauce reduces to desired consistency and meatballs are cooked through.

Remove form the heat, stir in basil and season to taste.  Serve on spaghetti and top with parmesan.
